The project is based on an industrial innovation within the plant-based market, addressing two key inefficiencies in the sector: dependence on the cold chain and the predominant use of soy or coconut, which are allergenic ingredients with a high environmental impact.
The solution enables the production of a rice-based yogurt-style product, 100% made from rice, shelf-stable for 3 months without refrigeration, soy-free and gluten-free, with an estimated 70% reduction in energy footprint and an industrial cost approximately 40% lower than the sector average, generating gross margins above 50%.
Currently, there is no direct competition in Europe in the segment of shelf-stable rice-based yogurt alternatives without cold chain, opening access to channels such as e-commerce, travel retail, export markets, vending and horeca.
